  • 2 packages frozen chopped broccoli
  • 2 whole eggs
  • 1/2 cup mayonnaise
  • 1 can Cream of Mushroom Soup
  • 2 tablespoons chopped onions
  • 2 cups shredded cheddar cheese
  • salt and pepper to taste
  • 1 cup Vigo Golden Toasted Bread Crumbs
  • 1/2 stick butter


Boil frozen broccoli for 5 minutes, drain well.  In a separate bowl, beat eggs and stir in mayonnaise, mushroom soup, onions, cheddar cheese, salt and pepper. Fold in broccoli.  Place mixture in casserole dish, bake uncovered in 375 oven for 40 minutes.  Meanwhile, prepare topping by melting butter in a small skillet.  Add Vigo Bread  Crumbs and stir until golden toasted.  After removing casserole from oven, cover with bread crumb topping and serve.
