Morocco produces the best Oil Cured Olives, called ôSalsec.ö These olives are picked ripe, placed in layers, covered with coarse salt, and cured to a point where much of the olive's moisture is absorbed by the salt. The olives are then rubbed with olive oil, hence the name. These meaty olives are glistening jet black, medium sized and have a pronounced olive flavor. They are meant to be eaten as is, but can be used for baked meats such as chicken or fish. They can also be put in pasta dishes or couscous dishes.
