Mexican Rice

  • In a large saucepan with tight-fitting lid, bring 2 1/2 cups (20 oz.) to a boil.
  • Add 2 Tbsp butter (optional) then one package Vigo Mexican Rice, stirring while boiling for one minute.
  • Cover saucepan tightly.  Reduce heat to simmer, cook for 20 – 25 minutes. 
  • Enjoy as a side dish or sprinkle any or all of the following to make a one dish, family friendly meal. (Cooked ground beef, cooked chicken, cheddar cheese, jalapeno pepper slices, olives)
