Roasted Curried Cauliflower

  1. Preheat oven to 400 degrees.
  2. In a large bowl, mix oil, vinegar, curry and turmeric.
  3. Add cauliflower and toss to coat.
  4. Transfer to a large, aluminum foil-lined baking pan being sure to leave space between the florets.
  5. Season with salt and pepper.
  6. Place in oven and bake 25 – 30 minutes or until they start to brown.
  7. Remove to a serving platter, drizzle with honey and sprinkle with pine nuts, cilantro, and raisins.
