- 4 medium zucchini
- 1/2 cup flour
- 2 eggs, beaten with 2 tbsp. water
- 3/4 cups Vigo Panko Bread Crumbs
- 1/4 cup Parmesan cheese, grated
- Alessi Smooth Marinara, for dipping
Preheat oven to 325.
With skin on, cut zucchini into 3-4” sticks. Dredge in flour shaking off excess. Dip in egg mixture and then roll in a mixture of panko breadcrumbs and grated parmesan.
Place breaded zucchini on a greased cookie sheet in a single layer and bake for 8- 10 minutes. Turn and bake an additional 10 minutes or until golden brown.
Sprinkle with extra grated cheese if desired and serve with Alessi Smooth Marinara Sauce as a dipping sauce.
