Crispy Onion Rings

Ingredients
- 1 large onion
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon smoked paprika
- 1 teaspoon Alessi Sea Salt
- 1 egg, beaten
- 1 cup buttermilk
- 1 1/2 cups Vigo Seasoned Bread Crumbs
- vegetable oil for frying
Directions
- Slice onion into ¼ inch slices, separate into rings and set aside.
- Mix flour, baking powder, paprika, salt and pepper in a large bowl. Set aside.
- Mix egg and buttermilk together in a separate bowl. Set aside.
- Pour bread crumbs into a shallow dish.
- Add onion slices to flour mixture and toss to coat.
- Transfer slices to egg mixture and using a fork or tongs, toss to coat.
- Transfer slices to the bread crumb dish and toss until completely coated.
- Fry breaded rings in heated oil (360 – 370 degrees), in small batches for 2-3 minutes, until golden brown and turning once.
