Ingredients

  • 1 large onion
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Alessi Sea Salt
  • 1 egg, beaten
  • 1 cup buttermilk
  • 1 1/2 cups Vigo Seasoned Bread Crumbs
  • vegetable oil for frying

Directions

  1. Slice onion into ¼ inch slices, separate into rings and set aside.
  2. Mix flour, baking powder, paprika, salt and pepper in a large bowl. Set aside.
  3. Mix egg and buttermilk together in a separate bowl. Set aside.
  4. Pour bread crumbs into a shallow dish.
  5. Add onion slices to flour mixture and toss to coat.
  6. Transfer slices to egg mixture and using a fork or tongs, toss to coat.
  7. Transfer slices to the bread crumb dish and toss until completely coated.
  8. Fry breaded rings in heated oil (360 – 370 degrees), in small batches for 2-3 minutes, until golden brown and turning once.
