Ingredients

  • 1/2 pound ground sausage (leave out if you prefer a vegetarian dish)
  • Vigo Extra Virgin Olive Oil, for frying
  • 2 tablespoons green onion, chopped
  • 1 teaspoon Alessi Garlic Puree
  • 1 cup Vigo Hearts of Palm, drained, patted dry and chopped
  • 1 can Vigo Artichoke Hearts
  • 1/2 cup Vigo Roasted Red Peppers, drained, patted dry and chopped
  • 1/2 cup mayonnaise
  • 2 large eggs, beaten
  • 1 1/2 cups Vigo Seasoned Panko Bread Crumbs
  • dash of cayenne pepper, optional

Directions

  • Heat 1 Tbsp olive oil in saucepan, then add ground sausage (if desired) and sauté until browned. Remove to medium bowl.
  • In same saucepan, add onion and garlic and sauté (about 2 minutes). Add hearts of palm, artichoke hearts and peppers and sauté 3 minutes stirring occasionally. Combine with cooked sausage in large bowl.  Add mayonnaise, eggs, panko bread crumbs and cayenne and mix well.
  • Form mixture into round disks 3” disks and fry in heated oil until golden brown on both sides.  Drain on paper towels before serving. Serve with a squeeze of lemon or with a mayonnaise-based dipping sauce if desired.
