Heat 1 Tbsp olive oil in saucepan, then add ground sausage (if desired) and sauté until browned. Remove to medium bowl.
In same saucepan, add onion and garlic and sauté (about 2 minutes). Add hearts of palm, artichoke hearts and peppers and sauté 3 minutes stirring occasionally. Combine with cooked sausage in large bowl. Add mayonnaise, eggs, panko bread crumbs and cayenne and mix well.
Form mixture into round disks 3” disks and fry in heated oil until golden brown on both sides. Drain on paper towels before serving. Serve with a squeeze of lemon or with a mayonnaise-based dipping sauce if desired.
