  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 2 eggs, beaten
  • Oil, for frying
  • 3 cups Vigo Italian Seasoned Panko Bread Crumbs, divided


In a large mixing bowl, mix mashed potatoes together with cheese, eggs and 2 cups seasoned panko bread crumbs. Form mixture into patties. Roll patties in reserved panko to form an even coating.

 Pan-fry in oil over medium to medium high heat in small batches turning once until golden brown on both sides. Serve immediately.
