- 10 ounces baby clams, drained but retain liquid
- 1 pound frozen shrimp, thawed
- 4 tablespoons Vigo Extra Virgin Olive Oil
- 1 16 ounce package Vigo Yellow Rice
Place clam juice in a large measuring cup and add water until there is 4 ¼ cups (34 oz.) of liquid in total. Pour into a large saucepan with a tight fitting lid, add thawed, drained shrimp and bring to a boil.
Add olive oil, drained clams, and package of Vigo Yellow Rice. Stir while boiling for 1 minute.
Cover the saucepan tightly and let simmer, undisturbed, for 20 – 25 minutes. Makes 6-8 servings.
SUGGESTION: For a spectacular table-side presentation, transfer cooked paella to a serving dish and garnish with any or all of the following: lemon wedges, steamed crab legs, mussels or clams in the shells, green peas, asparagus, Vigo Roasted Red Peppers or Vigo Artichoke Hearts.
