Ingredients

  • 8 ounces smoked sausage, sliced in 1/4" rounds
  • 2 tablespoons Vigo Extra Virgin Olive Oil
  • 1 8 oz. pkg Vigo Yellow RiceAdd 1 8 oz. pkg Vigo Yellow Rice to cart
  • green peas, cooked
  • Vigo Roasted Red Peppers, sliced

Directions

Bring 2 cups (16 oz.) water to a boil in a saucepan with a tight-fitting lid.

Add olive oil, 1 package Vigo Yellow Rice and sliced smoked sausage.

Stir for one minute, cover, reduce heat to simmer and cook undisturbed for 22-25 minutes.

Garnish with peas and Vigo Roasted Red Peppers.
